The chanterelle is best known as the "gold of the forest". The flavour of this valuable edible mushroom is mild and spicy, with a fruity note.

The dried mushrooms can be chopped up and used as a seasoning for minced meat, casseroles and sauces. 10g dried mushrooms are equivalent to 100g fresh mushrooms.

Preparation
Soak whole dried mushrooms in cold water for at least one hour. After soaking, the mushrooms can be used like fresh mushrooms.
